Goji and Maqui Berry Cream Tarts

Raw, Vegan Cream Tarts made with maqui berry and goji berry powder.

Ingredients

Tart Crust

Goji Berry Coconut Cream

Maqui Berry Coconut Cream

  • 1 can of full fat premium coconut milk
  • 2 teaspoons macqui berry powder
  • 2 tablespoons of maple syrup

Instructions

Tart Crust

  • Pulse macadamia nuts in the food processor until small chunks form and set aside in a bowl.
  • Soak dates for 15 to 20 minutes, remove pits and pulse in food processor until combined.
  • Add nuts and all other ingredients in the food processor with the nuts and process until a dough forms.
  • Line tart tins with saran wrap, press dough into tins to form a crust.
  • Place in freezer and set for one hour or overnight.

Goji Berry Coconut Cream

  • Place can of full fat coconut milk in the fridge overnight upside down.
  • Remove coconut milk from fridge, turn right side up, open and drain coconut water (save for smoothies).
  • Place coconut milk in a bowl with the rest of the ingredients and mix with a high speed hand blender until fluffy and smooth.
  • Place in fridge while making the maqui berry cream.

Maqui Berry Cream

  • Place can of full fat coconut milk in the fridge overnight upside down.
  • Remove coconut milk from fridge, turn right side up, open and drain coconut water (save for smoothies).
  • Place coconut milk in a bowl with the rest of the ingredients and mix with a high speed hand blender until fluffy and smooth.

Assembly

  • Remove tart tins from freezer.
  • Using a tablespoon to fill each tart tin with coconut cream alternating between goji berry cream and maqui berry cream.
  • Garnish with your choice of berries and/or nuts. (I used pistachios, goji berries and blackberries)
  • Remove from tart tins and remove plastic wrap.
  • Keep in fridge or freezer (if they last that long).

Notes

Place cans of coconut milk in fridge to set overnight before making recipe.
Tart dough should be sticky enough to form a crust, add more dates if needed.
Goji Berry Powder and Maqui Berry Powder can be purchased from an organic store.
Red Beet Powder can also be purchased from an organic store and is usually in the baking section.
Save the rest of the coconut cream to use a fruit salad topping :)
