Cucumber Dill Veggie Wraps with Coconut Wrappers

My favorite organic grocery store to shop at here in Edmonton, AB is Earth’s General Store; they always have unique ingredients I cannot find anywhere else.  When I was taking Fundamentals of Raw Cuisine Level 1 through Matthew Kenney Academy, I was only able to find most ingredients required for the course at Earth’s General Store; thank goodness! 

One of my favorite recipes from the Matthew Kenney Course where coconut wrappers made from coconut meat.  I love a good wrap, but the only problem with making coconut wrappers is Thai Yong Coconuts are not easy to find in Edmonton, AB.  Young Coconuts were only available at an organic grocery store this year for a couple of months, so when I saw these Paleo coconut wrappers at Earth’s General Store I was so excited!! I knew I had to make something super yummy with these!

I purchased some fresh dill from the farmer’s market so I decided to make a dill mayo and add colorful veggies, and yum these turned out amazing!  I julienned some carrot, cucumber and red pepper, and then added sprouts and pea shoots which paired so well with the dill mayo.  The dill mayo is super easy to make; soak macadamia nuts and blend with seasonings creating a dairy-free creamy spread. 

Dill is actually on the list of the World’s Healthiest Foods!  Here are just some of the health benefits this herb hast to offer.

  • Insomnia: the essential oils present in dill activate secretion and enzymes which have calming and hypnotic effects aiding in a good night’s sleep.

Perfect for summer, these wraps are so light, refreshing and easy to make!  The left over dill mayo is perfect as a vegetable dip and will keep in the fridge for three to five days.  Happy creating and thank you for reading!

Cucumber Dill Veggie Wraps wrapped in Coconut Wrappers

Veggie wraps with a yummy dill mayo wrapped in coconut wrappers.


Dill Mayo


  • 1 red bell pepper julienne
  • 2 large carrots julienne
  • 1/2 cucumber julienne
  • 1 cup pea shoots
  • 1 cup alfalfa sprouts

Dill Mayo

  • Soak macadamia nuts for 30 minutes, rinse and drain.
  • Chop dill.
  • Place all ingredients except dill in a high-speed blender and blend until smooth.
  • Transfer to a bowl, add dill and mix gently.


  • Spread dill mayo on wrap evenly leaving about 1 cm of space around the edges. (I like to use a lot)
  • Layer veggies to your liking towards one end of the wrap, fold side edges and roll wrap. Cut in half and enjoy!


Make the dill mayo the day before use; the flavor will be that much better!

    1. Aw, thanks! Yes those wraps are amazing, you should definitely get some! If you take the Matthew Kenney Course you will learn how to make them, the only problem is it is hard to find young coconuts here in Edmonton ๐Ÿ™ Let me know if you have any questions about the course!

      1. Yes I have made them before, actually. I gave up on the idea of getting into the MK Academy last year and bought all of his books to learn from for the time being. As I said, I am hoping to take it in the next year or so, and am so excited (SO SO SO EXCITED) about the new school in Thailand. Do you think you will take the other levels? You traveled to the States to take it in class?
